COFALEC (COnfédération des FAbricants de LEvure de l’UE) represents the EU yeast industry.
COFALEC was founded in 1959. With 36 factories scattered throughout the European Union countries, yeast manufacturers meet the needs for yeast supplies  COFALEC is a sector of FoodDrinkEurope,  (Confederation of the food and drink industries of the EU). Nearly 40% of European yeast production is exported outside the European Union.

Yeast is a living micro-organism (Saccharomyces sp.) obtained through fermentation.

Yeast is used in a very wide range of traditional applications: Bakery, Alcoholic beverage (Beer, Wine, Spirits, Cider..), Bio-ethanol, Food preparation, Feed products and more recently in human Health (probiotics effects).
